Hi there! Today I planned out our meals for the next week and I wanted to share some of the yummy recipes I included. The first thing I do is figure out what food I have on hand (fridge, freezer and pantry inventory). We have a lot of venison, eggs, a hodge podge of veggies and lots of snacks for the kids.
The most challenging meal for me is BREAKFAST! For years I didn’t eat breakfast, and I still struggle with getting it in. I’ve always been a coffee for breakfast person but I am working on balancing my health and making sure that I eat enough protein each day. This is definitely an area that I struggle with. For my kids, I usually keep fruit and greek yogurt on hand for them to grab for breakfast. And occasionally they will whip up some pancakes.
When it comes to lunch, I am usually grabbing leftovers from dinner or a big salad. I usually prepare a large batch of taco meat and can eat taco salad 5 days in a row, no problem. Again my kids are kinda on their own for lunch. I mean, they are teenagers they can handle it. I just make sure they’ve got options and they will make their own food.
Dinner is where I get to have the most fun. I really enjoy cooking at home. I also really enjoy eating out at restaurants. I just enjoy food! But cooking for my family is something that brings me joy. Now when I have to cook for other groups of people I get a little anxiety. Food and tastes are so different from person to person. And I like people to enjoy my food, so when its not my inner circle eating my meal, I get a little nervous about it.
So for this week, I went for high protein options with a good balance of fat and carbs. I’m working on eating for my specific metabolic type and that means getting a balance of protein, fat and carbs at each meal. On the dinner menu…
Cauliflower Soup – In this recipe I am going to sub the sausage for venison because that’s what we have and my daughter doesn’t eat pork. I’ll just add some extra seasonings to give it more flavor. We haven’t had this one before so I am looking forward to trying it out. I love cauliflower in so many things, and blending it up to add thickness to the soup is a great idea.
Burger In A Bowl – We make hamburger bowls occasionally and I always enjoy them. But I’ve never used ground beef, I’ve always just used frozen burger patties. And that burger sauce looks delicious! Looks like a quick and easy weeknight meal.
Greek Meatballs with Tzatziki plus a side of Tabbouleh – I absolutely love greek food. This week we had turkey meatballs in the freezer so they will fit perfectly in this dish. The yummy parsley in the tabbouleh and homemade tzatziki add a ton of freshness and flavor.
Winter Buddha Bowl – I realize I have a lot of bowls in my meal plan. They are just so easy! This bowl caught my eye because of the roasted beets. I don’t eat beets a lot, but I do enjoy them when I’ve had them. And these roasted beets sound delish, especially with the squash. I may add chicken to this bowl, or not, we all enjoy roasted chickpeas too.
Cauliflower Enchilada Casserole – Another new recipe for me. Cauliflower rice was something I already had on hand, along with enchilada sauce that I’ve been wanting to use. When we camp I make a skillet enchilada that is so yummy, so I’m interested to see if this recipe holds up to that one.
Venison Cube Steak with Caulimash – We have venison cube steak in the freezer that I need to use. I’ve never cooked cube steak so naturally I went to Pinterest to check out some recipes. The results were all pretty similar. I’m not sure my kids will go for this one honestly. But I’m not the mom that makes multiple meals. If they don’t enjoy what I’ve made (which doesn’t happen all that often) they can make themselves something. I know they like caulimash and veggies, so we shall see! The original recipe has regular mash potato but I plan on using cauliflower just because we like it so much.
Ground Venison & Cabbage Stir Fry – Again, I’ve got venison in the fridge so I’m subbing out the ground beef in this recipe. I also had a head of cabbage already to this was easy to prep for. This is pretty similar to egg roll in a bowl.
